Appearance and Care of St Tola Cheese

St.Tola cheeses are handmade organic cheeses, to which no additives or preservatives have been added. Our cheeses are living organisms and as they mature they become more distinctive in flavour. They will continue to mature in your premises if stored properly. Our cheeses should not be wrapped in cling film, as they needs to be able to breathe like you or me! Please store in cheese paper or greaseproof paper.
We do not create a synthetic rind to put on our soft St.Tola range (logs crottin and slices). Instead we develop a natural geotritum mould rind and this grows as the cheese matures. It works to protect the cheese and enhance the flavour. As in all good artisanal cheeses, other natural moulds, usually green or blue, may also develop, but these cause no harm. Many cheese lovers actually look for these moulds before they purchasing! The rind is just removed before the cheese is consumed or used for cooking.
We mature our cheese to suit our customers’ individual requirements from young, fresh and mild to mature and more pronounced in flavour. All of our cheeses are best stored between 4-7 degrees Celsius (38-45F). To enjoy them at their fullest, always bring to room temperature before serving as this brings out the full flavours of the cheese.

St Tola Log Fresh

This is a light fresh cheese. It has a lovely smooth and open texture and tangy lemony flavours and is perfect for cooking. Try it in a soufflé, stuffed into vegetable parcels or stirred into pasta sauces.

Available as a 1 kg log 8 per case

St Tola Log Mature

This is the original and still the best! With a beautiful, golden rind, firm creamy texture and heavenly sweet flavours – is it any wonder our unique mature log has won so many awards over the years?! Try it toasted with roasted vegetables and cranberry sauce or just slice it straight from the log for the cheeseboard.

St Tola Crottin

Our crottins are fresh buttons of goats’ cheese, which just melt-in-your-mouth. They are perfect for individual starter rounds, as an addition to a cheese board or just spread on hot toast with honey drizzled over – delicious! For the connoisseur, they can be matured to request and with ageing they develop a lovely golden rind and a more pronounced flavour.

St Tola Divine

This is the newest addition to the St Tola range. Our Divine cheese is a mild and creamy, soft spreadable cream cheese.  It has the softest dreamy texture imaginable and is super versatile!

Serve with seasonal fruit, a drizzle of honey or smoked salmon. Simple, delicious and divine!

This is a 120g slice of our Original St Tola log in a convenient pack. It is hand crafted and matured to a rich warm flavour.

 Use in salads, savoury dishes and on the cheeseboard. Simple, classic and original!

St Tola Hard Cheese

This is a cheddar style goats’ cheese with a marbled pale complexion and a sweet, tangy nutty flavour.

Try it with slice of pear and a glass of wine!

Available in sizes 2.2kg, 450g and 200g.

This firm tasty cheese is the latest addition to the St Tola Family! Its fabulous texture and mild salty flavour make it ideal for both cooking (as it keeps its shape very well) or for crumbling into light, summery salads.

Special Dietary Information

St Tola Goats Milk products are easily digested and are highly suitable from a health point of view. The smaller fat globules in goats milk are easy to digest particularly for the very young, the very old or those with cows milk product alergies. Goats milk products have been used to relieve asthma, eczema and migranes.
