This is a 120g slice of of our Mature Log. The cheese should have a golden rind on the outside and a soft white interior. It has complex, mellow and warm flavours and a rich, full-in-your-mouth texture. Like the mature log, this cheese cooks well but it also works well on a cheeseboard.
